Squid-ink paella with prawns in a two-handled pan

Supper Club

Paella & Fire

One long table in Chicago. Twenty-four seats, five courses, paella cooked over fire in the room. Weekly.

Spanish and Argentine food the way it is eaten at a fiesta: standing snacks while the fire gets going, a paella de marisco built in front of you, Argentine grilling after it, Spanish desserts with coffee. Bring your own bottle. Cooked by Nicolás Mónaco, who leads the paella station at Mama Delia, a Michelin Bib Gourmand restaurant in Wicker Park, and ran kitchens in Madrid.
